Moist lemon cupcakes filled with fresh strawberry compote, topped with strawberry lemonade buttercream.
ingredients
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup sugar
- 2 large eggs
- 1/2 cup milk
- 2 tbsp lemon zest
- 1/4 cup lemon juice
- 1 cup fresh strawberries, chopped

Preheat oven to 350°F. Line muffin tin with cupcake liners.

In a bowl, whisk flour, baking powder, and salt.

In another bowl, cream butter and sugar. Add eggs one at a time.
- 4.
Mix in lemon zest and lemon juice. Gradually add dry ingredients and milk.
- 5.
Fill liners halfway. Add 1 tbsp strawberry compote. Top with more batter.
- 6.
Bake for 18-20 mins. Cool before frosting.
