Stroopwafel Caramel Swirl Cheesecake

- 2 cups crushed stroopwafels
- 1/2 cup melted butter
- 24 oz cream cheese, softened
- 1 cup sugar
- 1 tsp vanilla extract
- 3 eggs
- 1/2 cup caramel sauce
- 1/4 cup heavy cream

Preheat oven to 325°F.

Mix crushed stroopwafels with melted butter, press into bottom of springform pan.

In a large bowl, beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each addition.

Pour half of the cheesecake mixture over the crust.

In a small bowl, mix caramel sauce and heavy cream. Drizzle over the cheesecake mixture.

Pour remaining cheesecake mixture on top.

Swirl the caramel mixture using a knife.

Bake for 50-60 minutes, until center is almost set.

Turn off oven, leave cheesecake inside for 1 hour.
