Citrus Blossom SMaSH Ale Mead

- 4.5 lbs Orange Blossom honey
- 2.25 lbs Pilsner LME
- 0.75 oz Citra hops
- 1 packet Wyeast 1388 Belgian Strong Ale Yeast
- 1.5 gallons water

Sanitize all brewing equipment thoroughly to prevent contamination.

In a large pot, combine 1.5 gallons of water with Pilsner LME, heating gently until fully dissolved; then remove from heat.

Stir in the Orange Blossom honey until completely incorporated.

Allow the mixture to cool to a temperature between 70°F and 80°F.

After cooling, add the Citra hops and let steep for 30 minutes to 1 hour for enhanced flavor infusion.

Strain the must into a sanitized fermentation vessel, discarding the used hops.

Pitch the Wyeast 1388 Belgian Strong Ale yeast into the fermentation vessel, stirring gently to distribute.

Seal the vessel with an airlock and ferment at a consistent temperature, ideally between 68°F and 72°F, for about 2 weeks.

After fermentation, transfer the mead into bottles and allow to carbonate for another week before enjoying.
