Honey Garlic Pork Chops with Veggies

- 2 bone-in pork chops (about 1 inch thick)
- 1/2 tablespoon olive oil
- Salt and pepper, to taste
- 1/4 cup honey
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1/2 teaspoon apple cider vinegar
- 1/2 teaspoon Dijon mustard
- 1 small sweet potato, sliced into wedges
- 1 cup broccoli florets
- 1/2 tablespoon cornstarch (optional, for thickening)

Preheat your oven to 425°F (220°C).

In a large bowl, toss sweet potato wedges with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 15 minutes.

In the same bowl, combine broccoli florets with a drizzle of olive oil, salt, and pepper. Add to the baking sheet with sweet potatoes and roast for an additional 15 minutes.

While veggies roast, season pork chops with salt and pepper. In a skillet over medium-high heat, add olive oil and sear chops for 5-6 minutes on each side until cooked through.

In a small saucepan, combine honey, minced garlic, soy sauce, apple cider vinegar, and Dijon mustard over medium heat. Simmer for 3-5 minutes until slightly thickened; optional: mix in cornstarch for extra thickness.
