Sweet Waha Date Beer

- 10 oz pitted dates, chopped
- 6 oz malt extract
- 2 oz honey
- 1 oz caramel grains (lightly crushed)
- 1 oz hops (cascade or similar)
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1 packet ale yeast
- 5 gallons of clean, filtered water

In a large pot, bring 2 gallons of water to a boil.

Add the caramel grains and let steep for 30 minutes, then remove and discard the grains.

Stir in malt extract and honey until fully dissolved.

Add the chopped dates, cinnamon, and nutmeg; simmer for 15 minutes.

In a separate pot, bring 3 gallons of water to a boil and add hops for 10 minutes.

Combine the two mixtures in a fermentation vessel with cooled boiled water, ensuring a total volume of 5 gallons.

Allow the mixture to cool to room temperature, then sprinkle the ale yeast on top.

Seal the fermentation vessel with an airlock and place it in a dark, warm area for 1-2 weeks.

Once fermentation is complete, bottle the beer with priming sugar, and allow to carbonate for at least another week before tasting.
