Apple Sweet Potato Almond Pancakes
ingredients
- 1 cup almond meal
- 1 medium sweet potato, cooked and mashed
- 1 large egg
- 1 teaspoon vanilla essence
- 1/2 cup Greek yogurt
- 1/2 teaspoon baking powder
- 1 medium apple, finely chopped
- 1/2 teaspoon ground cinnamon (optional)
- Pinch of salt
- Cooking oil (for frying)

In a mixing bowl, combine the almond meal, mashed sweet potato, baking powder, chopped apple, cinnamon, and salt.

In a separate bowl, whisk together the egg, vanilla essence, and Greek yogurt until smooth.

Pour the wet ingredients into the dry mixture and stir until well combined.

Heat a skillet over medium heat and add a little cooking oil.
- 5.
Pour in batter for each pancake, cooking until bubbles form on the surface (about 2-3 minutes).
- 6.
Flip and cook the other side for another 2-3 minutes until golden brown.
- 7.
Repeat with the remaining batter, adding more oil as needed.
- 8.
Serve warm with additional Greek yogurt and your favorite toppings.
