Almond Spelt Pancakes
ingredients
- 1 cup spelt flour
- 2 tablespoons skim milk powder
- 2 tablespoons almond meal
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 egg
- 1 cup water
- 1/2 teaspoon vanilla extract
- Cooking spray, for greasing
- Maple syrup, for serving

In a large mixing bowl, combine spelt flour, skim milk powder, almond meal, sugar, baking powder, baking soda, and salt.

In a separate bowl, whisk together the egg, water, and vanilla extract.

Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; lumps are okay.

Preheat a non-stick skillet or griddle over medium heat and lightly grease it with cooking spray.

Pour 1/4 cup of batter onto the skillet for each pancake.
- 6.
Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.

Repeat with the remaining batter.
- 8.
Serve the Almond Spelt Pancakes warm, topped with maple syrup or your favorite toppings.
