Sweet Potato and Black Bean Tacos

These vegan-friendly tacos boast a delicious mix of flavors and textures with crispy sweet potatoes, hearty black beans, and fresh veggies all loaded into a soft tortilla. Satisfy your taco craving without any meat.

- 2 sweet potatoes, peeled and diced
- 1 can of black beans, drained and rinsed
- 1 red onion, chopped
- 1 red bell pepper, seeded and chopped
- ½ cup fresh cilantro, chopped
- 1 tbsp chili powder
- 1 tsp paprika
- 1 tsp cumin
- 1 tbsp olive oil
- 1 lime, juiced
- Salt and pepper to taste
- 8 soft tortillas

Preheat oven to 400°F. Toss diced sweet potatoes with olive oil, chili powder, paprika, and cumin on a baking sheet. Bake for 20-25 minutes until they are crispy.

In a separate pan, sauté onion and red pepper with a pinch of salt for 5 minutes until soft. Add black beans and cook for another 3-4 minutes.

Remove sweet potatoes from the oven and mix in the black bean and veggie mixture. Squeeze lime juice over the top and add chopped cilantro.

Warm up tortillas in the microwave or on a pan. Divide the sweet potato and black bean mixture evenly among the tortillas.
