Spicy Lebanese Noodle Medley
ingredients
- 8 ounces thin egg noodles
- 2 chicken breasts, grilled and sliced
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 small onion, thinly sliced
- 2 garlic cloves, minced
- 1 tablespoon vegetable oil
- 3 tablespoons BBQ sauce (Lebanese variant)
- 2 tablespoons soy sauce
- 1 tablespoon Lebanese pomegranate molasses
- 1 teaspoon Lebanese pepper paste (optional)
- Salt and pepper, to taste
- Fresh parsley, for garnish

Cook the noodles according to package instructions until al dente. Drain and set aside.

In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and sauté for a minute until fragrant.

Toss in the sliced onions and peppers, cooking until they become tender-crisp.

Push the vegetables to one side of the skillet and add the cooked noodles to the other side.

Drizzle BBQ sauce, soy sauce, pomegranate molasses, and Lebanese pepper paste (if desired) over the noodles. Mix well.

Season with salt and pepper to taste, stirring everything together.

Add the grilled chicken slices and gently stir to coat them in the sauce and heat through.

Continue cooking for a few more minutes until the flavors meld together.

Serve hot, garnished with fresh parsley.
