Vibrant Shrimp Salad
ingredients
- 1 lb small shrimp, peeled and deveined
- 4 cups lettuce, torn into bite-sized pieces
- 2 cups boiled potatoes, cubed
- 1 cup leeks, thinly sliced
- 2 cloves garlic, minced
- 2 tomatoes, diced
- 1 cucumber, diced
- 1 lemon, juiced
- 1 bell pepper, thinly sliced
- 2 carrots, shredded
- Salt and pepper to taste

In a pot of boiling water, cook shrimp for 2-3 minutes until pink and cooked through. Drain and set aside.

In a large bowl, combine lettuce, potatoes, leeks, garlic, tomatoes, cucumber, bell pepper, and carrots.

In a small bowl, whisk together lemon juice, salt, and pepper to make dressing.
