Teriyaki Glazed Beef Ribs with Miso Vegetables

- 2 carrots, sliced
- 1 onion, diced
- 2 stalks of celery, sliced
- 2 tablespoons miso paste
- 1 can diced tomatoes (400g)
- 1 large sweet potato, diced
- 4 tablespoons teriyaki sauce
- 4 cloves black garlic, minced
- 4 potatoes, peeled and quartered
- 1 cup shredded cheese

Preheat the oven to 350°F (175°C).

Season the beef ribs with salt and pepper, then place them in a roasting pan.

In a separate bowl, mix the carrots, onion, celery, miso paste, and diced tomatoes. Pour the mixture over the beef ribs.
