ingredients
- 3 lbs honey
- 1 packet of champagne yeast
- 1 gallon water
steps
- 1.
In a large pot, heat the water to 160°F to ensure it's hot enough to dissolve the honey properly.
- 2.
Gradually stir in the honey, ensuring it's fully dissolved into the water, creating a sweet, golden mixture.
- 3.
Remove the pot from heat and allow the mixture to cool gradually to room temperature.
- 4.
Once cooled, transfer the mixture to a sanitized fermentation vessel, making sure to leave some space at the top.
- 5.
Sprinkle in the champagne yeast, stirring gently to incorporate it into the honey-water mixture.
- 6.
Cover the fermentation vessel with a clean cloth or lid, allowing it to breathe while keeping contaminants out.
- 7.
Let it ferment at a stable temperature (around 68–75°F) for 4-6 weeks, checking periodically for bubbling activity.
- 8.
After fermentation is complete, carefully siphon the mead into clean bottles, leaving sediment behind.
- 9.
Seal the bottles and age them in a cool, dark place for at least 6 months to enhance the flavors.
- 10.
Once aged, chill and enjoy your handcrafted mead!
