Tropical Banana Pancakes

- 2 ripe bananas
- 4 eggs
- 1/4 cup coconut flour
- 1/4 cup unsweetened shredded coconut
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon baking powder
- Pinch of salt

- Sliced bananas and maple syrup, for serving (optional)
