Tropical Veggie Medley with Soy Curls
ingredients
- 1 sweet potato, peeled and cubed
- 1 cup pineapple, diced
- 1 cup pomegranate seeds
- 2 bell peppers (any color), sliced into strips
- 2 carrots, julienned
- 1 cup soy curls
- ½ teaspoon chili powder
- ½ teaspoon ground cumin
- ¼ teaspoon smoked paprika
- ¼ teaspoon garlic powder
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)

Preheat the oven to 400°F (200°C).

In a medium bowl, rehydrate the soy curls according to package instructions. Drain and set aside.

In a larger bowl, combine the soy curls, sweet potato, pineapple, pomegranate seeds, bell peppers, carrots, chili powder, cumin, paprika, garlic powder, olive oil, salt, and pepper. Toss until well coated.

Spread the mixture evenly on a baking sheet lined with parchment paper or greased lightly with olive oil.
- 5.
Roast for 25-30 minutes, or until the sweet potatoes are tender and slightly caramelized.
- 6.
Remove from the oven and garnish with fresh cilantro.
- 7.
Serve warm as a side dish or over a bed of quinoa for a complete meal.
