Turkey and Veggie Stir-Fry

Light and healthy, this stir-fry is bursting with colorful veggies and juicy turkey. The dish is flavored with a zesty blend of ginger, garlic, and soy sauce, and is perfect for a quick and nutritious meal at any time of day.

- 1 lb turkey breast, sliced into thin strips
- 2 cups broccoli florets
- 2 cups sliced mushrooms
- 1 large red bell pepper, sliced
- 1 large yellow onion, chopped
- 3 cloves garlic, minced
- 1-inch fresh ginger, peeled and minced
- 2 tablespoons vegetable oil
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon honey
- 1 teaspoon cornstarch
- Salt and pepper to taste

In a small bowl, whisk together soy sauce, rice vinegar, honey, and cornstarch. Set aside.

Heat oil in a large skillet over medium-high heat. Add turkey and stir-fry until browned and cooked through, about 3 minutes. Remove from pan and set aside.
