Turkish Spiced Lamb Tortellini

Juicy spiced lamb enclosed in homemade pasta, drizzled with tangy yogurt sauce.

- 1 lb ground lamb
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- Salt and pepper, to taste
- 2 cups all-purpose flour
- 2 large eggs
- 1/4 cup water
- 1 cup plain yogurt
- 1 tbsp lemon juice
- 1 tbsp olive oil
- Fresh parsley, chopped (for garnish)

In a skillet, cook the ground lamb over medium heat until browned. Add onion, garlic, ground cumin, ground coriander, ground cinnamon, ground nutmeg, salt, and pepper. Cook until onions are tender. Set aside to cool.

In a large bowl, combine flour, eggs, and water. Knead until a smooth dough forms. Divide the dough into two equal parts and cover with a damp cloth. Let rest for 15 minutes.

On a well-floured surface, roll out one dough portion into a thin rectangle. Cut into 2-inch squares using a knife or pastry cutter.

Place a small spoonful of the lamb mixture in the center of each square. Fold the dough over to form a triangle, pressing the edges to seal. Bring the two bottom corners together, pressing to seal and create a tortellini shape. Repeat with the remaining dough and lamb mixture.

In a large pot of salted boiling water, cook the tortellini until they float to the surface, about 3 minutes. Remove with a slotted spoon and drain.

Meanwhile, whisk together yogurt, lemon juice, and olive oil in a small bowl. Season with salt and pepper.
