- 8 oz udon noodles
- 14 oz firm tofu, pressed and cubed
- 2 cups plum tomatoes, diced
- 1 cup carrots, julienned
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1 tbsp sriracha (adjust to taste)
- 2 green onions, chopped
- Salt and pepper, to taste
- Sesame seeds, for garnish

In a large skillet, heat sesame oil over medium heat. Add cubed tofu and sauté until golden brown on all sides, about 8-10 minutes.
