Celebrate with this colorful and flavorful Birthday Fish recipe! A zesty citrus marinade infuses a whole grilled snapper with a festive flair. Served with a side of tropical fruit salsa, this dish is sure to make a splash at your next party.
ingredients
- 2 whole snappers (1 lb each), scaled and gutted
- 2 lemons, juiced
- 2 limes, juiced
- 4 cloves of garlic, minced
- 1 tsp paprika
- 1 tsp cumin
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 1 cup diced mango
- 1 cup diced pineapple
- 1/2 cup diced red bell pepper
- 1/4 cup chopped cilantro
- 1 jalapeno, seeded and diced
- Salt and pepper to taste

In a bowl, combine lemon juice, lime juice, garlic, paprika, cumin, salt, pepper, and olive oil.

Place snappers in a shallow dish and pour marinade over them. Cover and refrigerate for 1 hour.

Preheat grill to medium-high heat. Remove fish from marinade and grill for 5-7 minutes per side.

Meanwhile, mix mango, pineapple, red bell pepper, cilantro, jalapeno, salt, and pepper to make salsa.

Serve grilled snapper with a generous spoonful of tropical fruit salsa on top.
