Vegan Banana Oatmeal Muffins

- 2 ripe bananas, mashed
- 1 ½ cups rolled oats
- 1 cup whole wheat flour
- ½ cup maple syrup
- ¼ cup almond milk
- ¼ cup coconut oil, melted
- 1 tsp baking powder
- 1 tsp vanilla extract
- ½ tsp cinnamon
- ¼ tsp salt
- Handful of chopped walnuts (optional)
- Handful of dark chocolate chips (optional)

Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.

In a large bowl, combine mashed bananas, rolled oats, whole wheat flour, maple syrup, almond milk, melted coconut oil, baking powder, vanilla extract, cinnamon, and salt. Mix well until all ingredients are fully combined.

If desired, fold in chopped walnuts or dark chocolate chips for added flavor and texture.

Spoon the batter into the prepared muffin tin, filling each cup about ¾ full.

Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
