This easy make ahead breakfast casserole recipe is loaded with nutritious veggies like bell peppers, spinach, and mushrooms. Pair it with your favorite hot sauce for a delicious and satisfying meal.
ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 2 bell peppers, diced
- 2 cups sliced mushrooms
- 2 cups baby spinach
- 8 large eggs
- 1/2 cup milk
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup shredded cheddar cheese

Preheat oven to 350ºF.

Heat olive oil in a large skillet over medium heat. Add onion and bell peppers, and cook until softened, about 5 minutes.

Add mushrooms and baby spinach, and cook until veggies are tender and spinach is wilted.

Beat eggs together with milk, salt, and black pepper in a large mixing bowl.

Stir in veggie mixture and shredded cheese.

Pour mixture into a greased 9x13 inch baking dish and bake for 30-35 minutes, or until set in the middle.
