Crispy vegan-friendly fritters with a low FODMAP twist
ingredients
- 2 cups leftover rice
- 1 cup mixed veggies (peas, corn, carrots)
- 1/2 cup gluten-free breadcrumbs
- 2 flax eggs (2 tbsp ground flaxseed + 6 tbsp water)
- 1/2 tsp dried parsley
- Salt and pepper to taste
- Olive oil for frying

Mix rice, veggies, breadcrumbs, flax eggs, parsley, salt, and pepper

Form patties and flatten slightly

Heat olive oil in a pan, fry until golden brown
