Use up leftover rice and veggies in these crispy fried fritters packed with flavor from ginger, garlic, and soy sauce. Perfect as a snack or a meal served with a sweet chili dipping sauce.
ingredients
- 2 cups cooked leftover rice
- 1 cup mixed cooked vegetables (carrots, peas, corn, etc.)
- 2 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 1 tablespoon soy sauce
- 2 eggs, beaten
- ½ cup all-purpose flour
- Oil for frying
- Sweet chili dipping sauce

In a large bowl, mix together rice, vegetables, garlic, ginger, soy sauce, eggs, and flour until well combined.

Heat oil in a large frying pan over medium heat.

Using a spoon, drop the rice mixture into the hot oil and flatten slightly.

Fry until golden brown, about 2-3 minutes per side.

Drain on paper towel-lined plate. Serve hot with sweet chili dipping sauce.
