Gooey Red Velvet S'mores Magic

- 1 ½ cups dairy-free buttermilk
- 1 cup mini marshmallows

- 8 ounces dairy-free semi-sweet chocolate, chopped For the Marshmallow Frosting:
- 1 ½ cups dairy-free butter, softened
- 3 cups powdered sugar
- 1 teaspoon vanilla extract
- 1 cup vegan marshmallow fluff

Preheat the oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.

In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cocoa powder. Set aside.

In a large mixing bowl, cream together the butter and sugar until light and fluffy.

Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and red food coloring.

Gradually add the dry ingredients, alternating with the dairy-free buttermilk, beginning and ending with the dry ingredients. Mix until just combined.

Divide the batter evenly among the prepared pans. Sprinkle mini marshmallows on top of each layer, gently pressing them into the batter.

Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

While the cakes are cooling, prepare the gooey chocolate ganache by heating the dairy-free cream in a small saucepan over medium heat until it begins to simmer. Remove from heat and add the chopped chocolate. Let sit for 2-3 minutes, then whisk until smooth. Set aside to cool and thicken.

For the marshmallow frosting, beat the softened dairy-free butter in a large mixing bowl until fluffy. Gradually add powdered sugar and beat until well combined. Mix in the vanilla extract and vegan marshmallow fluff until light and fluffy.

Once the cakes have cooled, assemble the layers by spreading a generous amount of marshmallow frosting between each layer.
