Delicious and healthy Jaffa cakes made with oat flour, sweet potato, and orange zest, topped with dark chocolate. Perfect for a guilt-free dessert or snack!
ingredients
- 1 cup oat flour
- 1 cup mashed sweet potato
- 1/2 cup maple syrup
- 1/4 cup orange juice
- 1 tbsp orange zest
- 1 tsp baking powder
- pinch of salt
- 4 oz dairy-free dark chocolate

Preheat oven to 350°F.

In a mixing bowl, combine oat flour, sweet potato, maple syrup, orange juice, orange zest, baking powder, and salt.

Grease a muffin tin and spoon batter into each hole, filling halfway.

Bake for 15-20 minutes, or until a toothpick comes out clean. Let cool completely.

Melt dark chocolate in a double boiler or microwave.
- 6.
Spoon melted chocolate on top of each cake and smooth out.
- 7.
Let chocolate harden, then remove cakes from tin and enjoy!
