Cozy Chicken and Veggie Fried Rice
ingredients
- 1 cup cooked jasmine rice (preferably day-old)
- ½ lb boneless, skinless chicken breast, diced
- 1 large egg, beaten
- ½ cup frozen peas and carrots
- 1 ½ green onions, chopped
- 1 ½ cloves garlic, minced
- 1 ½ tablespoons soy sauce
- ½ tablespoon sesame oil
- ½ tablespoon vegetable oil
- Salt and pepper to taste

Heat the vegetable oil in a medium skillet over medium-high heat.

Add the diced chicken, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes. Remove the chicken and set aside.

In the same skillet, add the minced garlic and sauté until fragrant, about 30 seconds.

Push the garlic aside and pour in the beaten egg, scrambling until fully cooked.

Stir in the peas and carrots, cooking until heated through, about 2 minutes.

Add the cooked rice to the skillet, breaking up any clumps.

Pour in the soy sauce and sesame oil, stirring to combine all ingredients thoroughly.

Return the chicken to the pan and mix well. Toss in the chopped green onions, then serve hot.
