This seasonal mead is infused with warming spices like cinnamon, cloves, and nutmeg, perfect for cozying up by the fire during the Yule season.
ingredients
- 4 lbs Bearded Tree Yucatan Honey
- 1 gallon water
- 2 cinnamon sticks
- 10 cloves
- 1 nutmeg, cracked
- 1 tbsp orange zest
- 1 packet champagne yeast
steps
- 1.
In a large pot, heat water and honey until dissolved.
- 2.
Add spices and orange zest, simmer for 30 minutes.
- 3.
Remove from heat, cool to room temperature.
- 4.
Transfer to a fermenting vessel, pitch yeast.
- 5.
Allow to ferment for 2-4 weeks, then bottle and enjoy!
