Zen Chicken Lettuce Wraps

- 1 red bell pepper, julienned
- 1 carrot, julienned
- 1 cup thinly sliced cucumber
- 1/4 cup chopped green onions
- 1/4 cup chopped cilantro
- 10 large lettuce leaves
