Zesty Chicken PVT Tacos

- 1 lb boneless, skinless chicken breasts, cut into strips
- 1 cup PVT
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper (optional for heat)
- Salt and pepper, to taste
- 8 small tortillas, warmed
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 1 ripe avocado, sliced
- Lime wedges, for serving

In a bowl, combine the chicken strips, minced garlic, chili powder, cumin, paprika, cayenne pepper (if desired), salt, and pepper. Toss to coat the chicken evenly with the spices.

Heat olive oil in a skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.

In the same skillet, add the PVT and sauté until heated through, about 3-4 minutes. Remove from heat.

Warm the tortillas on a dry skillet or in the microwave for a few seconds on each side.
