ingredients
- 4 salmon fillets (5-6 oz each)
- 2 tablespoons olive oil
- 1 orange, juiced and zested
- 1 lime, juiced and zested
- 2 cloves garlic, minced
- 1 teaspoon honey
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup long-grain white rice
- 2 cups chicken broth (or water)
- 1/4 cup fresh cilantro, chopped
- 1 tablespoon butter (optional)
- Lime wedges for serving
steps
- 1.
In a small bowl, whisk together olive oil, orange juice, lime juice, orange zest, lime zest, minced garlic, honey, salt, and pepper.
- 2.
Place the salmon fillets in a shallow dish, pour the marinade over them, and let them marinate for 30 minutes.
- 3.
While the salmon is marinating, rinse the rice under cold water until the water runs clear.
- 4.
In a saucepan, combine the rice and chicken broth; bring to a boil, then reduce heat to low, cover, and simmer for 18 minutes or until rice is cooked.
- 5.
Once the rice is done, fluff it with a fork and stir in the chopped cilantro and butter (if using). Set aside.
- 6.
Preheat your grill or grill pan over medium-high heat. Remove the salmon from the marinade and grill for 4-5 minutes per side, or until cooked through and flaky.
- 7.
Serve the grilled salmon over a bed of cilantro rice, garnished with lime wedges.
