Zesty Gizzard Skillet
ingredients
- 1 lb chicken gizzards, cleaned and trimmed
- 1 cup long-grain white rice
- 2 bell peppers (any color), thinly sliced
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups chicken broth
- Fresh cilantro, for garnish (optional)

In a large skillet, heat olive oil over medium heat. Add onions and garlic, sauté until fragrant.

Add chicken gizzards to the skillet and cook until browned.

Mix in rice, bell peppers, paprika, cumin, chili powder, salt, and black pepper. Stir to combine the ingredients evenly.

Pour chicken broth into the skillet and bring to a boil. Reduce heat to low, cover, and simmer for 20-25 minutes or until rice is tender and liquid is absorbed.

Remove from heat and let rest for 5 minutes. Fluff the rice with a fork, garnish with fresh cilantro if desired, and serve hot.
