ingredients
- 2 lbs New Mexico green chilies, roasted, frozen, thawed, and peeled
- Zest of 2 lemons
- 5 lb bag of white sugar
- 1 tbsp yeast nutrients
- 1 packet yeast
steps
- 1.
Preheat a large pot over medium heat.
- 2.
Add the thawed green chilies to the pot and sauté them, stirring occasionally, for about 5-7 minutes until heated through.
- 3.
In a separate bowl, combine the sugar with the lemon zest, mixing well to release the oils from the zest.
- 4.
Gradually add the sugar mixture to the pot with the chilies, stirring until fully dissolved.
- 5.
Sprinkle in the yeast nutrients and yeast, then stir for another minute.
- 6.
Allow the mixture to simmer on low heat for about 30 minutes, stirring occasionally, until it thickens to a jam consistency.
- 7.
Test the consistency by placing a small amount on a plate and letting it cool; it should hold its shape.
- 8.
Once thickened, remove from heat and let it cool briefly.
- 9.
Transfer the jam into sterilized jars, seal, and allow to cool completely before refrigerating.
- 10.
Enjoy within a month or process jars for long-term storage using proper canning methods.
