Zesty Herb-Roasted Pork and Veggies

- 4 bone-in, skin-on pork chops
- 2 tablespoons olive oil
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and pepper, to taste
- 2 medium zucchinis, sliced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 red onion, quartered
- Juice of 1 lemon

In a large bowl, mix olive oil, rosemary, thyme, garlic powder, onion powder, smoked paprika, salt, and pepper.
