Zesty Lemon Herb Quinoa with Asparagus

- 1 cup quinoa, rinsed
- 2 cups vegetable broth
- 1 lemon, zested and juiced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh basil, chopped
- 8 oz asparagus, trimmed
- 1 tablespoon balsamic vinegar

In a Suvie pan, add rinsed quinoa and vegetable broth. Season with salt, pepper, garlic powder, and half of the lemon zest. Place the pan in the Suvie Kitchen Robot.

In a separate Suvie pan, arrange the asparagus and drizzle with olive oil, balsamic vinegar, and a pinch of salt and pepper. Add the remaining lemon zest on top.

Set both pans to cook at 200°F for 25 minutes for perfectly cooked quinoa and tender asparagus.

Once cooking is completed, fluff the quinoa with a fork and stir in the lemon juice, parsley, and basil.
