- 1 lemon, thinly sliced
- 2 sprigs fresh dill
- 2 sprigs fresh thyme
- Salt and black pepper to taste
- ½ lb fresh green beans, trimmed
- 2 cloves garlic, minced
- 1 cup cooked quinoa
- 1 tablespoon olive oil

Preheat the sous vide water bath to 130°F (55°C).

Season the cod fillets with salt and black pepper, then place each fillet in a separate sous vide bag.

Add a few lemon slices, a sprig of dill, and a sprig of thyme to each bag before sealing them.

Immerse the bags in the water bath and cook for 30 minutes.

While the cod cooks, blanch the green beans in boiling water for 3 minutes, then transfer them to an ice bath to stop the cooking process.

In a pan over medium heat, sauté the minced garlic in olive oil for 1 minute.

Add the blanched green beans, season with salt and black pepper, and cook for an additional 3-4 minutes until tender.
