Zesty Mushroom Chipotle Sub

- 8 oz mushrooms, sliced
- 1 small onion, thinly sliced
- 1 bell pepper, thinly sliced
- ½ cup sliced olives
- 2 tbsp chipotle sauce
- 4 sub rolls
- 4 slices provolone cheese
- ½ cup Hidden Valley Ranch dressing
- 1 cup crushed Limon flavored Lays baked chips

In a large skillet, sauté the mushrooms, onions, and bell pepper until tender.

Bake in the preheated oven for 5-7 minutes, or until the cheese is melted and bubbly.

Remove the subs from the oven and sprinkle the crushed Limon flavored Lays baked chips over the melted cheese.

Drizzle Hidden Valley Ranch dressing over the chips.

Close the subs and serve hot.
