Sweet Potato, Chickpea and Coconut Stew

Warm your soul with this vegan and hearty African inspired stew filled with sweet potatoes, chickpeas, and creamy coconut milk. The combination of flavors will leave you wanting more!
ingredients
- 2 tbsp olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 2 sweet potatoes, peeled and diced
- 1 red bell pepper, diced
- 1 tsp cumin powder
- 1 tsp paprika
- 1 tsp coriander
- 1/4 tsp cayenne pepper
- 1 can chickpeas, drained and rinsed
- 1 can diced tomatoes, undrained
- 1 can coconut milk
- Salt and pepper to taste
- Handful of fresh chopped cilantro for garnish
steps

Heat olive oil in a large pot over medium heat. Add onion and garlic and sauté for 3-4 minutes until onion is translucent.

Add sweet potatoes and red bell pepper, cumin, paprika, coriander, and cayenne pepper. Sauté for another 5 minutes.

Add chickpeas, diced tomatoes, coconut milk and season with salt and pepper. Bring to boil, reduce heat to low and simmer for 20-25 minutes or until the potatoes are tender.

Adjust seasonings to taste and add more spices as needed. Top with fresh chopped cilantro.
