- 1 cup fresh parsley, chopped
- 1/2 cup fresh cilantro, chopped

- 2 tsp lemon zest

- 1 tsp sea salt
- 1/2 tsp black pepper
- 1 medium zucchini, sliced
- 2 medium carrots, chopped
- 1 cup cherry tomatoes
