- 6 cups apple juice (unsweetened)
- 2 cups apple purée (homemade or store-bought)
- 1 cup honey
- 1 teaspoon cinnamon
- ½ teaspoon ground cloves
- ½ teaspoon nutmeg
- 1 orange, zested and juiced
- 1 tablespoon yeast (champagne or mead yeast)
- 1 cup water (for yeast activation)

In a small saucepan, heat 1 cup of water until warm but not boiling.

Remove from heat, and dissolve the honey in the warm water, stirring until completely combined.

In a large pot, combine the apple juice, apple purée, cinnamon, cloves, nutmeg, orange zest, and orange juice.

Stir in the dissolved honey mixture, then gently heat the mixture on low, being careful not to boil it.

Once warmed, remove from heat and allow it to cool slightly to around 75°F.

Sprinkle the yeast over the mixture and stir gently to combine.

Cover the pot with a clean cloth and let it sit in a warm place for about 24 hours to ferment.

After fermentation, transfer the mead to a clean fermentation vessel, leaving sediment behind.

Seal with an airlock and let it ferment for 2-4 weeks, checking periodically for clarity.
