Avocado and Shrimp Toast with Poached Egg

Creamy avocado spread on toasted bread, topped with sautéed shrimp and sweet cherry tomatoes, finished with a perfectly poached egg.
ingredients
- 4 slices of bread
- 1 ripe avocado
- ½ pound of shrimp, peeled and deveined
- 1 cup of cherry tomatoes, halved
- 2 eggs
- Olive oil
- Salt and pepper to taste

Toast the bread slices and set aside.

In a pan, sauté the shrimp in olive oil until pink and cooked through, around 3-4 minutes. Add cherry tomatoes and season with salt and pepper.

Cut the avocado in half and remove the pit. Mash the avocado until smooth and season with salt and pepper.
- 4.
Poach 2 eggs in boiling water for 3 minutes.
- 5.
Assemble the toast by spreading the avocado mixture onto the slices of bread, dividing the shrimp and tomato mixture evenly on top of the slices, and finally placing the poached egg on each slice.

Serve and enjoy!
