Avocado and Smoked Salmon Breakfast

Start your morning with this delicious and nutritious protein-packed breakfast. The creamy avocado pairs perfectly with the smoky salmon for a flavor explosion.
ingredients
- 2 ripe avocados
- Juice of 1 lime
- 4oz smoked salmon
- 2 eggs
- 1 tbsp olive oil
- Salt and pepper to taste
- 2 tbsp chopped fresh chives

Cut the avocados in half and remove the pits. Scoop out some of the flesh to make a larger cavity in each half.

Drizzle the lime juice over the avocado halves.

Crack an egg into each cavity.

Place the avocado halves in a baking dish and bake at 350°F for 18-20 minutes until the eggs are cooked to your liking.

While the avocado halves are baking, heat the olive oil in a small pan over medium heat. Add the smoked salmon and cook for 2-3 minutes until heated through.

Remove the avocado halves from the oven and top with the smoked salmon.

Sprinkle with salt, pepper, and chives.
