Banana Carrot Apple Orange Muffins

- 2 ripe bananas, mashed
- 1 medium carrot, grated
- 1 medium apple, peeled and finely chopped
- Juice and zest of 1 orange
- 1 ½ cups wheat flour
- ½ cup brown sugar
- 1 tsp baking powder
- 1 tsp baking soda
- ½ tsp cinnamon
- ¼ tsp nutmeg
- ¼ tsp salt
- 2 eggs
- ¼ cup vegetable oil
- ½ cup plain yogurt
- 1 tsp vanilla extract

Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.

In a large bowl, combine the mashed bananas, grated carrot, chopped apple, orange zest, and orange juice. Mix well.

In a separate bowl, whisk together the wheat flour, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.

In another bowl, beat the eggs lightly. Add the vegetable oil, yogurt, and vanilla extract. Stir well.

Gradually add the dry ingredients to the wet ingredients and mix until just combined. Be careful not to overmix.
