- 5 cups water
- 1 cup sugar
- ¼ cup honey
- 1 tablespoon active dry yeast
- 1 cup fresh raspberries or blueberries
- 1 lemon, zested and juiced
- ½ teaspoon salt

In a large mixing bowl, combine toasted rye bread and 5 cups of hot water, allowing it to steep for about an hour.

Strain the mixture through a fine mesh sieve into another clean bowl, discarding the bread solids.

Stir in sugar, honey, lemon juice, lemon zest, and salt until fully dissolved.

Sprinkle in the active dry yeast, mixing gently to combine. Cover the bowl with a cloth and let it sit at room temperature for 3-4 hours until bubbly.

Once bubbly, add in the fresh raspberries or blueberries and gently mash them with a spoon to release their juices.

Transfer the mixture into sterilized bottles, leaving some space at the top. Seal tightly and let ferment at room temperature for 2-3 days.
