ingredients
- 1 gallon white grape juice
- 1 cup mixed fresh berries (strawberries, blueberries, raspberries, blackberries)
- 1 cup honey
- 1 teaspoon lemon juice
- 1 packet wine yeast (like Montrachet)
- 1 teaspoon pectic enzyme
- 1/2 teaspoon potassium metabisulfite (optional, for stabilization)
steps
- 1.
In a large sanitized fermenter, combine the white grape juice and honey, stirring well to fully dissolve the honey.
- 2.
Gently crush the mixed berries to release their juices and add them to the fermenter.
- 3.
Stir in the lemon juice, pectic enzyme, and the yeast, ensuring a thorough blend.
- 4.
Cover the fermenter with a clean cloth and let it sit at room temperature for 24 hours to initiate fermentation.
- 5.
After 24 hours, seal the fermenter with an airlock to allow gases to escape while protecting against contaminants.
- 6.
Ferment at a stable temperature (65-75°F) for 2-3 weeks, or until bubbling stops and sediment settles.
- 7.
Optional: Once fermentation is complete, add potassium metabisulfite to stabilize the pyment.
- 8.
Siphon the pyment into sanitized bottles, leaving some headspace, and store in a cool, dark place for at least 6 months to age before enjoying.
