Blueberry Raspberry Melomel

ingredients
- 3 lbs raw honey
- 1 gallon water
- 2 cups fresh or frozen raspberries
- 2 cups fresh or frozen blueberries
- 1 packet mead yeast (Lalvin D-47 or similar)
- 1 tsp yeast nutrient
- 1/2 tsp acid blend (optional)
- Campden tablets (for sterilization, optional)

In a large sanitized pot, bring 1 gallon of water to a simmer.

Remove the pot from heat and stir in the honey until well dissolved.
- 3.
Allow the mixture to cool to room temperature, then transfer to a sanitized fermentation vessel.
- 4.
If using Campden tablets for sterilization, crush and add them to the mixture. Wait 24 hours for the sulfites to dissipate.
- 5.
Add the mead yeast and yeast nutrient to the cooled honey-water mixture.
- 6.
Gently crush the berries and add them to the fermentation vessel.
- 7.
Seal the fermentation vessel with an airlock and place it in a dark, cool area.
- 8.
Allow the mead to ferment for 4-6 weeks, checking periodically for bubbling in the airlock.
- 9.
Once fermentation slows, siphon the mead off the sediment into another clean container, leaving the berries behind.
- 10.
Age the mead for an additional 2-3 months in a cool, dark place for best flavor development.
