- 355 ml (12 oz) red grape concentrate
- 1 teaspoon citric acid
- 1 teaspoon tartaric acid
- 1 teaspoon malic acid
- 2 small oranges, juiced and zested
- Pectolase Rohamet P
- 1 teaspoon yeast nutrient
- 1 tablet thiamine (vitamin B1)
- 1 tablet ascorbic acid (vitamin C)
- 1 sachet Gervin GV1 Green Label wine yeast
- 1 crushed Campden tablet

In a large pot, combine the elderberries, honey, red grape concentrate, and 1 gallon of water.

Heat the mixture gently, stirring until the honey dissolves completely, then remove from heat.

Add the citric, tartaric, and malic acids, ensuring everything is well mixed.

Incorporate the juice and zest of the two oranges for a fresh citrus flavor.

Allow the mixture to cool to room temperature before adding the Pectolase and yeast nutrient.

Crush the Campden tablet and add it to the mixture. Let sit for 24 hours to allow for sulfite reactions.

Transfer the mixture to a sanitized fermentation vessel, ensuring it has enough airspace.
