Almond Coconut Blueberry Scones
ingredients
- 2 cups almond flour
- 1/3 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, cold and cubed
- 1/2 cup coconut cream
- 1 large egg
- 1 tsp vanilla extract
- 1 cup fresh blueberries
- Zest of one lemon

Preheat oven to 400°F.

In a bowl, mix almond flour, sugar, baking powder, and salt. Cut in butter until crumbly.

In another bowl, whisk coconut cream, egg, and vanilla. Combine with dry ingredients.
- 4.
Gently fold in blueberries and lemon zest.
- 5.
Shape dough into a circle, cut into 8 wedges, and place on a baking sheet.
- 6.
Bake for 18-20 minutes until golden brown.
