- 1 can (14 oz) diced tomatoes, no added sugar
- 1 can (6 oz) tomato paste, no added sugar
- 1 cup green bell pepper, chopped
- 1 cup zucchini, diced
- 1 cup beef broth
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- ½ tsp cayenne pepper (adjust for heat)
- Salt and pepper, to taste
- 1 tbsp olive oil
- Optional toppings: shredded cheese, avocado, sour cream, chopped cilantro
