- 8 lbs Pale Malt
- 1 lb Munich Malt
- 1 lb Crystal Malt (40L)
- 1 lb Buckwheat Honey
- 1 oz Zythos hops (bittering)
- 0.5 oz Zythos hops (flavor)
- 0.5 oz Zythos hops (aroma)
- 1 packet American Ale Yeast (such as US-05)
- 5 oz priming sugar (for bottling)
- 1 tsp Irish Moss (optional, for clarity)
- 5 gallons water (for brewing)

Heat 3.5 gallons of water to 165°F (74°C) for mashing.

Add crushed grains to the water and maintain the temperature at 152°F (67°C) for 60 minutes.

Sparge with 170°F (77°C) water to collect 6.5 gallons of wort.

Bring wort to a boil and add 1 oz of Zythos hops.
- 5.
After 30 minutes, add 0.5 oz Zythos hops and Irish Moss.

At the end of the 60-minute boil, remove from heat and stir in 1 lb of buckwheat honey.

Cool the wort rapidly to about 70°F (21°C) and transfer to a fermentation vessel.
- 8.
Pitch the yeast and seal with an airlock. Ferment for 7-10 days at 68-72°F (20-22°C).

Bottling: After primary fermentation, dissolve priming sugar in boiling water, cool, and add to the beer.

Bottle the beer and let it carbonate at room temperature for 2 weeks.
