Cajun Butter Shrimp with Cheesy Grits
ingredients
- 1/4 cup grits
- 1 cup chicken broth
- 1/4 cup shredded sharp cheddar cheese
- 4 oz large shrimp, peeled and deveined
- 1 tbsp unsalted butter
- 1 clove garlic, minced
- 1 tsp Cajun seasoning
- 1/8 tsp smoked paprika
- Pinch of cayenne pepper (adjust to taste)
- 2 tbsp chopped green onions
- Salt and pepper to taste
- 1/2 tbsp olive oil
- Lemon wedge for serving

In a small saucepan, bring chicken broth to a boil. Gradually stir in the grits, reduce the heat to low, and simmer until thickened (about 15-20 minutes). Stir in the shredded cheddar cheese, season with salt and pepper, then keep warm.

In a frying pan, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

Toss in the shrimp, Cajun seasoning, smoked paprika, and cayenne pepper; cook until the shrimp turn pink (about 3-4 minutes).
