- ½ cup unsalted butter, chilled and cubed

- 1/4 cup ice water
- 4 cups Idaho apples, peeled and sliced
- ¼ cup brown sugar
- 2 tsp cinnamon
- 1 tsp nutmeg
- 1 tsp vanilla extract
- 2 tbsp lemon juice
- 1 cup granulated sugar (for caramel)
- 6 tbsp unsalted butter (for caramel)
- ½ cup heavy cream

In a large bowl, combine flour, sugar, and salt. Cut in cubed butter until the mixture is crumbly.

Gradually add ice water, mixing until the dough comes together. Wrap in plastic wrap and refrigerate for 30 minutes.
